Not your typical enchiladas

These enchiladas are one of my favorite food. My family usually makes them during the holidays. These enchiladas are made with small tortillas, my mother would make a chili sauce that she would pour on top of the raw tortilla dough until it would turn a light red color. She would make the tortillas by hand. The way we would make them is by adding beans with mashed potato and chorizo at the bottom, lettuce, cotija cheese, tomatoes and salsa. We would also just add a piece of meat or chicken on the side. So far I have not found a restaurant that sells these near me, so I try to take advantage during the holidays or when I’m back in Mexico.
